Easy Healthy Recipe: Rhubarb Leather

Fruit leather, or jerky, is simply pulverised fruit that has been dried out. It’s a handy snack on-the-go, and is super simple to make. You can make it with apple, apple and strawberry, or any combination of fruit. We currently have a glut of rhubarb at the allotment, so this is an easy way to store it.

Sometimes I add a big spoonful of homemade berry jam to brighten up the colour, but this is the most basic version of the recipe.

– Chop a few washed stems of rhubarb into chunks, pop in a pan with a lid.
– Add a splash of orange juice and sprinkle of white sugar and cook, covered, for a few minutes.
– You can add frozen / fresh strawberries and vanilla essence if you wish.
– When rhubarb is cooked, allow to cool slightly.
– Zizz in a blender, then spread, still warm, on silicon trays (or greaseproof paper).
– Pop in a 80 degree oven for a few hours, the chopped fibre gives it a good texture. Flip it over after it starts drying to dry both side.
– Peel off dried ‘leather’ and chop into strips. Hey presto – portable rhubarb!
