ARC is a small volunteer-led Scottish charity that supports the rescue, neutering, care and rehoming of stray and abused dogs in Constanta, Romania. Easy Healthy Seasonal Recipe: Homemade Apple Crisps
What to do with a glut of apples? Make apples crisps of course – they’re fab to snack on during the day, or if you’re out for a long hike or run. And they’re easy.
Some apples, cored
Juice of half a lemon
– Preheat oven to a very low temperature (between 60 – 100 degrees C)
– Squeeze the half lemon into a jug of cold water.
– Slice cored (not peeled) apples into thin slices.
– Pop into lemony water for a few minutes (water to cover).
– Arrange on a baking tray lined with greaseproof paper and bake until crisp. Check from time to time and turn over after a bit.
– The lower temperature the oven is, the longer the process but the better the crisp.
– Allow to cool and store in an air-tight jar. Or eat.
Article of the Month: A Long Hot Soak… With Epsom Salts
I’m a big fan of a relaxing warm bath after a hard day’s exercising. No ice baths for me, no siree (although a localised cold compress to any minor niggle aids recovery). In my warm bath is poured copious amounts of bubbly or salty stuff. Traditionally bath salts are used to mimic the pH of hot springs and the mineralisation of the water that’s bubbled through the earth. I used to use Radox muscle soak. Upon checking the ingredients on the box, I discovered that they are simply NaCl (regular salt) and Sodium Sesquicarbonate (a ‘double salt’) with some nice smelling and coloured stuff. Crucially, missing a number of minerals.
The mineral Magnesium (Mg) is used in many enzymatic reactions in the body, including energy production and a deficiency can lead to fatigue, mood swings, muscle soreness and spasms. You can get Mg through many foods including nuts, pumpkin and sunflower seeds and green vegetables (cabbage, broccoli, kale). Here’s a really good article by Aberdeen nutritionist Chris Fenn.
Magnesium is readily present in many raw foods, but in an era of processed food (with valuable minerals processed out of it) it is sometimes lacking. In addition and it’s absorbed from the earth that these plants grow in, intensive farming reduces the amount of Magnesium found in many foods. Instead of supplementing with Mg orally, you can simply soak in it and it will be absorbed through the skin.
Soaking in a warm bath of Epsom salts is an excellent way to absorb Magnesium and other minerals and ease tired muscles. It can also help ease colds, and relax the body after a hard day.
