Hello healthy people,
Welcome to summer! Longer days and milder weather means exercising outdoors is a brilliant option – the advantage of the Scottish weather is that it’s rarely too hot to exercise. We had perfect cycling conditions for the recent Etape Caledonia cycle race, 136 km (85 miles) through gorgeous Highland Scenery, and up a mountain or two. You can see by the photo that I had a brilliant time. A highly recommended event.
Cycling inspires me, and I’m looking forward to passing the passion on in my Edinburgh Festival of Cycling ‘Fitness for Cyclists’ workshop, 6.30pm Thursday June 21 at the studio. It’s packed full of realistic exercise and nutrition tips to keep cyclists in tip top shape – and it even includes free healthy food! Find out more info on the Facebook event page. Easy Healthy Recipe: Bashed Butter Beans
This is a super vegan side dish, packed full of flavour and protein. Think of it as a healthy version of mashed potato.
Either 1 can butter beans, drained, or equivalent dried butter beans soaked and cooked.
Juice half a lemon
1 medium white onion, chopped
2 cloves garlic, chopped
Drizzle of your favourite cooking oil
teaspoon mixed herbs dried, or tablespoon of fresh chopped mixed herbs (thyme works well)
salt and pepper to taste
– Saute onion and garlic in a little oil.
– After 5 minutes, add drained / cooked butter beans and stir well.
– Add lemon juice and a splash of water to stop the beans sticking and help infuse flavour.
– Add herbs and cook for around ten minutes.
– Bash with a potato masher to get your preferred consistency.
– Serve topped with finely chopped spring onion.
And Finally… The Studio Hosts ‘Queens for a Day’
We like getting involved with our local community and fitness pug Coco and I are very active with Leith Festival. It’s been running for over a century, and Gala Day and the Pageant are somewhat of a local tradition.
This Saturday from 10am to 1pm the fitness studio will be hosting ‘Queens for a Day’, a pop-up exhibition on the history of the Festival. We’re also organising the whole parade, that goes along Balfour Street at midday on Saturday. If you’re in the area, pop by and say hello.
