Welcome to spring! Longer evenings mean more time to fit in outdoor exercise. If you’re training for a race, remember to aim for around three training runs / rides a week, with a gradual increase in mileage. If you want to do more, try cross training (i.e. cycling, swimming, strength work) to develop overall fitness. This will help you remain injury free, as most injuries I’ve seen are from over-training or a sudden increase in mileage. Drop me a line if you have been injured in the past and are keen to get back into fitness. I have seen an awful lot of ankle / knee / hip niggles in the past and can help you get back to fitness without exacerbating your pre-existing condition.

Easy Seasonal Recipe: Things to do with Cottage Cheese
Cottage cheese is one of those foods I have learned to love as it ticks so many boxes nutritionally. It’s a widely-available cheap low-fat source of calcium and protein. When you’re shopping, automatically toss a pot into your basket, so you actually have it at home. Note the ‘best before’ date and plan when you’re going to use it so you’re not continually tossing out pots of cottage cheese (speaking from experience). It can be somewhat bland on its own, so here is how I sneak it into my everyday menu.
Omelette: Pour omelette mix (beaten eggs, veg and herbs) into frying pan, sprinkle a tablespoon of cottage cheese on top. Delicious, especially if you finish it under the grill.
Baked potato topping: mix with some corn kernels or spoon it au natural over a baked potato, Also good with baked potato and baked beans.
Nutritious Brushcetta: Lightly toast some good quality rye or brown bread, add room-temperature sliced tomatoes, freshly ripped basil, a dollop of cottage cheese and a good grind of black pepper.
Pasta: Make a basic tomato pasta sauce creamier by stirring in a big spoon of cottage cheese five minutes from the end of cooking.
Straight out of the pot: Sometimes I’m so ravenous after fitness sessions I scour the fridge for a quick snack. I position the cottage cheese pot in my eye line, so I grab it without thinking and attack it with a spoon. This is how I taught myself to like it, eating it when I was really hungry, so I appreciated how satisfying it is.
Herb it up: Quite often when I have half a pot left, I toss in a random selection of mixed herbs and flavoured ground peppercorns and return it to the fridge for a day to infuse the flavour. Enjoy on oatcakes or with salad.
Resisting Temptation Hint of the Month: Healthy Eating Out
Eating out need not be a hugely calorific affair if you’re canny where to dine. Often I prefer Japanese and Asian restaurants, as not only is it easy to make healthy choices, but they usually have a good non-alcoholic drinks selection. Here are some of my preferred spots in Edinburgh:

Fad or Fab: Bongaboard
Whilst at a small business reception at Downing Street last December, a dude turned up wearing Converse and carrying what looked like a skateboard. I was intrigued what his business possibly could be. I would never have guessed that he manufactures Bongaboard balance boards. A couple months down the track, and the Griffen Fitness studio is the proud owner of our very own customised Bongaboard.
It’s a bit like a wobble board, but only moves in the lateral plane, so it really works the stabilising muscles in the side of the knees and also engages the abdominal core to balance. Welcome to Coco the Griffen Fitness studio pug puppy
We are the proud owner of wee Coco the new studio dog. She’ll be trained to sit in on PT sessions (for those who like dogs). The convenience of living upstairs from the studio means that she can easily sit out any sessions for those with canine allergies (or those who prefer cats!). I am hoping Coco will bring more joy to studio sessions, and she certainly has for the clients she has already met.
A very well-behaved poppet, I have admit she’s the reason why this newsletter is slightly late. Who can resist? See photo…
